15 Quick, Easy Breakfasts for School Mornings

We get it. Everyone is running in different directions on school mornings, especially during that first week. Homework that was “just right here mom, I promise” goes missing. Permission slips that need signatures suddenly appear. Bathroom squabbles suddenly escalate to World War III. And somewhere in the middle of the chaos, you have to make breakfast. Don’t fret. Here are 15 easy breakfast ideas to get you started:

  • Overnight oats:  Mix oats with almond milk, cinnamon, honey, apples, raisins and nuts in a mason jar.  Set in refrigerator overnight for a quick grab-and-go breakfast.
  • Yogurt parfait: Vanilla Greek yogurt with bran cereal and berries
  • Smoothie with pineapple, spinach, green grapes, bananas and ice
  • Smoothie with frozen bananas, peanut butter and cocoa powder
  • Whole grain toaster waffle topped with yogurt and blueberries
  • Banana wrap:  Whole wheat flour tortilla topped with peanut butter. Add a whole banana and roll it up.
  • Breakfast sandwich:  Lean ham with low-fat Swiss cheese on a toasted whole-grain English muffin.
  • Smoothie pops: Mix strawberries, vanilla yogurt and banana in blender (freeze into popsicles)
  • Mini egg muffins: Create mini quiches in muffin tins using eggs, milk, low fat shredded cheese and veggies
  • Snack bags:  Fill with oat cereal, nuts, dried apple rings and raisins
  • Hard-boiled egg and grapes
  • Fruit dip: Sliced bananas, apples, pineapple, melon to dip in low fat yogurt
  • Whole wheat toast with peanut butter, apples slices, sprinkled with cinnamon
  • Breakfast burrito: Eggs, veggies, low fat cheese, black beans, wrapped in a whole wheat tortilla
  • Whole wheat raisin bread with almond butter

While we can’t repair the shredded remains of the homework just discovered under the couch (thanks Fido), these breakfasts will ease some of the pain of school mornings.
